Vail Mountain and Avanti Food & Beverage are teaming up to invest $4 million in the Golden Peak base area, unveiling plans for Avanti Vail, set to open in 2025.
Avanti Food & Beverage, known for its modern food hall concept, operates in Denver’s LoHi neighborhood and on Boulder’s Pearl Street Mall. Avanti Vail will bring a fresh culinary concept to Golden Peak, taking over the space previously occupied by Larkspur Restaurant. The venture aims to breathe new life into the area, offering a diverse range of dining options at affordable prices, with a focus on showcasing local chefs and restaurateurs.

“I am so excited to welcome Avanti Vail to Golden Peak. This partnership will elevate local chefs and business owners, enhance the employee and guest experience with additional dining options and share Avanti’s world-class experience at our destination,” Beth Howard, vice president and chief operating officer of Vail Mountain, says in a press release. “I’d also like to recognize the incredible legacy of Larkspur Restaurant and chef Thomas Salamunovich, who was a wonderful partner to Vail Mountain for nearly 25 years.”
Avanti Vail will provide a platform for chefs to experiment with quick-service models and for emerging talents to realize their culinary visions at a fraction of the cost of traditional restaurants. The initiative will also include provisions for staff housing and transportation.
Rob Hahn of Avanti Food & Beverage expressed excitement about venturing into the Vail market, citing opportunities for local chefs to thrive in a food hall setting. He emphasized the goal of offering affordable yet exceptional dining experiences, with plans for the restaurant’s patio to become a sought-after après-ski destination.
