Entertainment in the Vail Valley is getting a bounce in its step thanks to Vail-based Solaris Group and international design firm Rockwell Group. The project has transformed one of Solaris Plaza’s largest venues into Chasing Rabbits — an experiential dining and entertainment space created to delight and intrigue a new generation of Vail’s guests and residents.
Officially now open as of December 19, 2022, Chasing Rabbits is what the Vail Valley has been missing for far too long. It’s as innovative as it is impressive, so it’s truly hats off to the Solaris Group for this notable undertaking. A lot of support and talent from Peter Knobel’s team have made it all possible, from the vision and brilliance of Sharon Cohn to the management savvy of Hannah Burwell, Jacob Mienert, Marcus Cascio, Morgan Russell and many more behind the scenes.
“Developing such a unique project for our ski town was both challenging and rewarding,” says Cohn, President at Solaris Group. “We set out to create a destination that would offer multiple opportunities for entertainment and dining while also maintaining the distinctive heartbeat of our community.”

Similar to how Alice experienced Wonderland, Chasing Rabbits guests will be intrigued by the venue’s unexpected twists and turns. In fact, chasing rabbits means “doing something totally irrelevant or being distracted from what you intend to do.”
The unique entertainment venue in the heart of Vail Village is about 12,000 square-feet and has something for everyone — families, adults, locals and tourists alike. The playful space will offer five individualized experiences under one roof, including Chasing Rabbits restaurant, serving modern Mediterranean cuisine, along with Film House cinema, The Library cocktail lounge, Moon Rabbit speakeasy and Rabbit Hole arcade.
Be sure to head in as soon as you can this season, whether it’s just for a drink in Moon Rabbit and arcade game in Rabbit Hole, or for a full dinner in the restaurant. Make a reservation, and don’t miss the Steak Tartare starter and the Braised Rabbit Bolognese main dish.
The spaces can be used to host all events from social to corporate, in a unique, interactive setting. Chasing Rabbits will offer a new center for art and culture, including live music shows, comedy and film.
