A nod to the Florentine wine windows of centuries past, this hospitable touch offers a taste of European heritage in the heart of Vail. 

Once seated, the menu unfolds with depth and flavor. It’s tempting to try it all; so yes, order a variety of starters per la tavola (for the table). Warm focaccia, marinated olives, beef carpaccio, burrata with pesto … each dish showcases restraint and quality over excess. 

Pastas follow, and they are the heart of the experience: rigatoni coated in a rich lamb ragu, or linguini with lobster and Calabrian chili, cooked to that elusive perfect al dente. Each plate feels considered, grounded in tradition but subtly elevated. 

That balance is central to executive chef Ethan Diamant’s philosophy. “Italian cuisine is deeply rooted in cucina povera, a philosophy built on restraint, seasonality and an inherent respect for ingredients,” he says. “Many of the dishes we look to for inspiration are simple, yet profoundly expressive.” 

Diamant says his approach is to preserve this integrity while applying a more contemporary lens. 

“Technique becomes the tool that allows us to refine and elevate without distorting the soul of the dish,” he explains. “The intention is never to reinvent for the sake of it, but rather to distill each plate to its essence so that it feels both timeless and precise.” 

Beyond the food, Tavernetta excels in superb service and a connection that’s distinct — not just polished, but personal. 

“Hospitality, at its core, is about generosity,” Diamant says. “Every member of the team is empowered to tell the story behind the food — its origin, its intention, its place within the broader context of Italian culture. That level of understanding allows us to meet guests where they are, while also guiding them somewhere new.” 

Seasonality, too, plays a defining role. Through a close relationship with Esoterra Culinary Garden in Boulder, the kitchen works in tandem with the land, allowing ingredients to shape the menu rather than the other way around. “We’re often building dishes around what is at its absolute peak,” Diamant notes. “That kind of collaboration requires a certain agility in the kitchen.” 

As summer shifts into fall, that approach becomes even more compelling. Lighter, vibrant flavors give way to something deeper and more layered — a natural evolution that mirrors the changing landscape outside. “You begin to see a shift from the brightness and delicacy of peak-season vegetables to more structured, earthy flavors,” he says. “It’s a moment that invites a different kind of depth and nuance.”
